acorn squash - white flesh

Yes, acorn squash that has white flesh is simply a variety that

is white inside. It is fine to eat!

Hi Ellen,

Acorn squash is one of the 3 carbs I can reliably eat. So I'm

pretty unhappy that I keep getting ones that are white inside. What

I've found is that they are a) unripe----they are hard as a rock even

after 1 1/2 hours of baking

B) they are very small---also telling me they are unripe

c) if I do manage to get one that is soft enough to scrape out and eat,

I get a bellyache.

I have definitely not had a good time with them !

Well, maybe I’m mistaken. I know there are white-fleshed

varieties but it never occurred to me that some white-fleshed acorn squash

could be immature and unripe yellow-fleshed acorn squash. So, I don’t

know if they are ok to eat or not!
