So I'm pretty unhappy that I keep getting ones that are white inside. What I've found is that they are a) unripe----they are hard as a rock even after 1 1/2 hours of baking they are very small---also telling me they are unripe c) if I do manage to get one that is soft enough to scrape out and eat, I get a bellyache. I know there are white-fleshed varieties but it never occurred to me that some white-fleshed acorn squash could be immature and unripe yellow-fleshed acorn squash.
