My granddaughter thinks that if anyone isn't feeling well we should make them Lipton Noodle soup and they will be cured! That and a warm bath is what she craves when she's sick. I get oddball stuff like Raynaud's, of course, but had it since before time. ANYWAY, I do have " off days " . I do protein, water, and celery or apple slices, whatever I happen to have. Even if you can't taste it! As for comfort foods, that hasn't changed, its still chocolate... I made a HUGE batch just before my TT and have been living on it. There is just something about it that soothes me. Fortunately, I learned from my Mom how to make it.....and we do a darn good job too! My soup is one of the best I have ever eaten. In a pinch I will take canned or even Lipton's in the envelope....but I would much rather have my or my Mother's chicken soup. There is a secret to really good Chicken soup....and it is such a simple thing. Guest guest Posted November 12, 2003 Report Share Posted November 12, 2003 BUT....it is so simple...I am sure EVERYONE knows. It is just a little trick. Could never figure out WHY my Mother's soup tasted so good and mine didn't even compare...even when I used the same ingredients. My mother would NEVER let the soup/broth come to a full boil. She would watch it until the bubbles were just forming UNDER the surface....but never breaking the surface. Through the whole process she would just simmer the bones and meat. Even re-heating it. She also adds rice AND noodles (I don't know why...she just does) both of which she pre-cooks before adding to the gently simmering soup. As to veggies...add what you like. I don't like carrots, but to me the soup LOOKS funny without them...so I have found that if I grate the carrots I can't taste them, but get the nutrition and color. I sauté onion's in olive oil, add celery and when I add the broth (which has already been made with all sorts of herbs and stuff) I add MORE garlic...cause I used garlic when making the broth. Tons of garlic! LOL Usually use sage, thyme, garlic (as I have already said), cumin...can't think of what else. I am pretty heavy handed with my herbs...especially when doing the broth. Will, sometimes add saffron if I have some. And I never use just water to start the broth...I always add chicken broth and then chicken bullion. And fresh ground pepper. So, know you know. It's wonderful comfort food and doesn't make me dump!!
