I sometimes have days where I feel like I could eat all day and then I have days where I am stuffed after a few bites. I just consider it normal and don't worry about it anymore. From the level of exercise and activity you are doing it doesn't seem that harmful to consume 2000 cal., especially if they are high protein, low carb. Since it doesn't sound like you make a habit out of this I wouldn't be so worried unless you see the scale creeping back up. Take care.
