NOTE: I haven't tried it yet though so I'm not sure how well it will work, but here's the SCD ADAPTED version: Coconut Cream Frosting 1 cup coconut milk 1 cup honey pinch celtic sea salt 5 teaspoons coconut flour 1 tablespoon water 1¼ cup coconut oil 1. In a medium saucepan, heat coconut milk, honey and salt, simmer for 10 minutes 2. In a small bowl, combine coconut flour and water to form a smooth paste 3. Pour coconut flour mixture into saucepan 4. Mix contents of saucepan with a hand blender and bring to a boil, briefly 5. Remove pot from heat and very gradually blend in coconut oil 6. Place pot in freezer for 20-30 30-40 minutes, until frosting solidifies and turns white 7. Remove from freezer and blend again, until fluffy 8. Guest guest Posted August 2, 2010 Report Share Posted August 2, 2010 Coconut butter/spread/cream concentrate is pureed coconut. You can make it yourself from coconut flakes/chips or buy it in a jar. There's no dairy in it at all, only coconut. I add honey to it to make like a candy/frosting spread. http://www.tropicaltraditions.com/coconut_cream_concentrate.htmYou can make it from coconut chips much like you would make nut butter from nuts. Just grind up the coconut chips in a food processor. Keep running it until it eventually turns to a pasty consistency. The fat in the coconut chips comes out and makes it more like a butter.
