I add egg, too, but you may or may not be eating them. <?> and then I roll them around until covered in shredded coconut. You can use fresh shredded coconut or the stuff left over after making milk. They give them a more finished texture and absolutely disappear into the meatballs. You can add them to the body of the meatball as well if you want to soften the texture (which people normally do with nuts or bread, etc.) The important bit with meatballs, though, is the sauce. Make a great tomato sauce - NYS is having a great tomato year this year because of all the hot weather so great fresh tomatoes should be cheap - with other veggies like squash, onions, etc. added to it as well. If you are eating tomatoes, that is. Add in some chicken or other broth to enrich the sauce. But whatever sauce you are making, let them simmer in the sauce for a while with the pot mostly or fully covered. Guest guest Posted August 2, 2010 Report Share Posted August 2, 2010 1.5 lbs. beef 1 onion diced 2 cloves garlic minced 2 TBS each fresh parsley, basil and oregano chopped 1/2 diced fresh jalapeno 1 TSP Salt and 1 TSP pepper 16 - 1/2 inch cubes havarti or jack cheese (optional) Pull your meat directly out of the fridge and mix everything except the cheese until it just comes together. Using your hands form a meatball around the cheese cubes. Refrigerate overnight (not necessary). Preheat over to 400 and cook meatballs 15 minutes or until done. I use combos of bison, pork, chicken, turkey, ostrich or beef. Just make sure that at least 1 lb is of a fattier cut, such as ground pork or 80/20 ground beef. About 3/4 cup or so pureed veggies - use squash, green beans, carrots, spinach, broccoli, or whatever your child can tolerate. About 1/2 cup apple or pear sauce 1/2 tsp (give or take) ground cinnamon 1/4 tsp (give or take) ground nutmeg A little sea salt & pepper Combine all ingredients and form into balls. Place on a cookie sheet and bake in a 350 degree oven for about 1/2 hour. Guest guest Posted August 2, 2010 Report Share Posted August 2, 2010 My basic one I make often is:1 lb ground meat1 egg1/4 cup onion, minced1 clove garlic minced1 tbsp parsley minced, or just sprinkle some parsley flakes 1 tsp coriander powder1/2 tsp salt 1/2 tsp pepperMix the egg with all spices.
