Nice recipe.My coconut milk ice cream has turned out great. I make a coffee version with 1 Via packet from Starbucks added to the coconut milk and 2 Tbps honey.  It tastes just like their Frappucino bars used to taste.

I love coconut ice cream. I've only made strawberry. Hmmm, I'll have to try the coffee. I don't know what a via packet is (I'm not a coffee drinker!). What would I substitute instead? Bummer is I love coffee ice cream, I just like to have chocolate drizzled over it!!

- that ice cream idea sounds divine! I hate to be paranoid, but I'm not

sure the Via packets are legal- aren't they instant coffee? I thought instant

coffee is illegal. However, I'm willing to bet that finely ground espresso or

brewed espresso would be a great equivalent!

I am a coffee junkie, so I feel your pain :)

I drank some crappy Folgers instant stuff at my mother-in-laws over Christmas

(the kind that is like a tea bag). I thought I was doing the right thing by not

drinking her flavored coffee. Then I found out instant coffee is illegal. I hate

finding this stuff out the hard way. Now I know why everyone says it takes a

year to really figure everything out. I never believed that, but here I am 10

months in and I still make screw-ups!

Well, I can't wait to try to recipe with real coffee!

Or, could you just get one cup of Starbucks coffee and freeze it in ice

cubes to use for the flavoring?

You're right. I didn't realize that. I can't find nutrition info on

the Via

packet anywhere, though, so I suppose a letter from Starbuck's would

be in

order. Otherwise, I'm sure finely ground espresso would work as well.

I'm

using about a tablespoon.

Some of the old old recipes have you take it out of the freezer a time or

two and beat it with a mixer to get air in it.

I use a Cuisinart ice cream maker, and although it's firm when I take

it out

of the freezer, it's not hard as a rock. I know some people who don't

have

ice cream makers take it out of the fridge and stir it once and while

before

they freeze it--so I think it's any process that gets some air into

it.
