I had Colitis for 20 years before being unable to get it back in remission again despite a heavy drug regime. After my colon was removed there was no sign of any other inflammation and I was told eat what you want and enjoy life. About 5 years ago was my surgery and the interior Jpouch was a success. The surgeon did his job well. However, 18 months ago more inflammation (moderate) developed and I was told I was one of the 10% who develops CD. I said great and have been on flagyl from time to time. My point: After discovering the SCD diet and reading her book, I now realize that I wish I discovered this a decade ago but now want to preserve what I have left. Diet appears to be extremely important. I was on the caveman diet for the last two months but what a refreshing change the SCD diet is. I started recently and feel good. But I recently finished a course of flagyl so I will stick to the intro and stage one foods to hopefully slowly fix my body. Q's: On the banana ice cream recipe in Healing Foods by Ramacher it calls for HEAVY CREAM. Does the illegal stuff in this dissipate when you heat it?? Also what about organic applesauce. Surely she has you make the heavy cream into yogurt before using it for ice cream. If not, please describe recipe. For beginners, you can also make banana " ice cream " by freezing a banana and then whirring it in the cuisinart until it is smooth. I still have a few inches of my colon left and I am desperately hanging on to it!!!! Here are some answers to your questions: Q: On the banana ice cream recipe in Healing Foods by Ramacher it calls for HEAVY CREAM. Does the illegal stuff in this dissipate when you heat it?? A: NO. Don't use any milk or cream! You will have to use your delicious home-made SCD yogurt (perhaps strained?). Another trick I love is to take DCCC and use a hand blender to whizz it-- it basically turns into cream cheese! Q: Also what about organic applesauce. I found this at Job lot in Connecticut and it is absolutely junk free...Co from Vermont. A: If they can assure you that the apples have been cooked first, than it would be okay. The problem is that most applesauces (even if they are " legal " ) are made from raw apples. Weird, right? This would be problematic if you are still in the early stages and can't tolerate raw apples yet. Get a bag of apples and peel and core them. Cook them until soft and mushy. A crock pot is nice for this as you can just add a little water and let them cook. Then you should ferment the cream into SCD yogurt, usually called French cream. Also what about organic applesauce. Peel, core, and chink about 8-10 apples. Put them in a double boiler and cook until soft. Whiz with a handle blender. Chill, and eat.
