I forgot, if it is pasteurized only; or pasteurizedand homogenized?Any milk is fine, as long as it contains only milk (and cream if you're using 1/2 and 1/2 or cream for a richer yogurt). Just be sure to follow the directions in BTVC about making the yogurt by pasteurizing any milk you use, letting it cool, adding the starter, and letting it culture for 24 hours. I think most if not all milk you'll find in stores is both pasteurized and homogenized. Guest guest Posted June 22, 2010 Report Share Posted June 22, 2010 I use milk that is not homogenized but is pasteurized (it's actually illegal to sale raw milk in Louisiana). I like milk that isn't homogenized because you get this nice layer of fat on top of the yogurt. I eat that and it's a really nice treat. Just make sure you remove the layer of fat on top as it doesn't mix well with the yogurt and you'll have clumps. Some people prefer homogenized because the milk doesn't separate. Some people like the layer of yellow on the top from unhomogenized milk. Some people say raw milk is better. I won't say " milk is milk " because I happen to think pastured milk is better, but many people have gotten well on yogurt made from regular store-bought milk.
