Guest guest
I make patties from regular lentils a few times a week. Simmer lentils with preferred herbs plus white-black-red pepper and salt. While that cooks, slowly saute some onion and garlic. Puree the onion- garlic and add to lentils. Cook the lentils until they're as dry as possible; you'll have to repeatedly scrape the bottom of the pan with a squared-off spatula to prevent burning. Cool enough to handle and form into patties. Put patties on a wire rack and cool completely (I put them in front of a fan). They don't have to be cooked any more. I know these aren't pancakes, but I've had no luck frying lentils.
