Here is the recipe---but I have added my own changes to it so I'll add them in parentheses and you can choose to use them or not! 2 1/2 to 3 pound broiler fryer chicken, cut up ( I use a whole chicken and just de-bone it when done) (1 large onion, chopped and sauted in olive oil with about a teaspoon or more of minced garlic---I add this to all my chicken soups whether the recipe calls for it or not--and this one didn't call for any onion---can you imagine???? Of course, leeks are oniony so I guess they figured you didn't need any more onion flavor--NOT ME!!!) 1 medium carrot (I used 4) 1 medium stalk celery (I used 2) 1 bay leaf (I used 2) 1/2 cup uncooked barley (I used more like 3/4 cup---but I'm making soup for 7 people so I make a lot) 4 cups of water (I just add water to cover the chicken, I use a whole chicken most times for soups, don't worry if it's cut up or not and I add water to cover) 2 teaspoons of salt 1/4 teaspoon of pepper (I used more) 1 1/2 cups sliced leeks (I cut up 4 large leeks and it easily could have used more---I don't go up into the really dark green part of the leek) (Saute onion and garlic, add chicken to pot and cover with water, let simmer all afternoon.) Heat all ingredients except leeks to boiling in dutch over; reduce heat and let simmer 30 minutes (Now, I don't let it get to a boil, I just simmer all afternoon to get a real rich stock) remove chicken and debone it and cut it into bite-sized pieces---meanwhile add the leaks and gently simmer for about 15 minutes. Skim fat (if you want) and remove bay leaf then add cut up chicken to broth.
