My six year old daughter has tree nut and peanut allergies (anaphylactic) which we discovered when she was 18 months old. Then she developed asthma, juvenile arthritis, then uveitis (eye inflammation), and most recently was diagnosed with ulcerative colitis. We have been told since the arthritis diagnosis that there is no link to food. We eliminated other common allergens anyway (when she was two years old), but we didn't see any improvement. I think my daughter has had UC since the arthritis diagnosis, but doctors downplayed my concerns because she hasn't had any growth issues and wasn't bleeding (that we could see) until a year ago. We started on the SCD 3+ months ago and her inflammation marker is down 200 points (in the 400s). The gastroenterologist said it needs to be in the 150s, but seeing a downward trend is promising! We tried baking with coconut flour, but my daughter reacted very poorly to it. I think it is too advanced for her this early in the diet. I have been baking with shredded coconut and she doesn't have any problems. Our options are pretty limited, but we like the BTVC muffins with banana (using 2 1/2 cups of shredded coconut instead of nut flour). I made a coconut macaroon crust for the SCD cheesecake for her birthday two weeks ago that came out well (also no nut flour). Both kidz were allergic to corn, one of them to wheat, and I turned out to have problems w/ all grains. Trust me, you CAN live without any of them. I know it's hard to believe if you've been on a typical diet when you came here. My experience is that if the kiddo feels enough better to recognize the cause, they'll make the adjustment. Yeah, it's hard at first but you DO adjust... and it's SO-0-0-0-0 worth it!!!
