I can't do soy at all in any way shape or form and don't care for the water-like quality of rice milk. I then discovered Almond Milk and won't go back. Too bad the coffee shops haven't caught on to this yet. Speaking of which, does anyone have problems with caffeine? Or histamine type products like peppermint, etc. I'm beginning to think I can't have any kind of caffeine and I'm thinking the red " bumps " all over my arms, face, chest and sides of my body are from caffeine. It's so embarrassing! I haven't worn a short sleeved top or tank top in years! Does anyone else have this problem? If so, what is it and how do I get ride of these red irritations? Is it a hive? I had suggested the restaurant idea, too, but wonder how much money, time, and effort it would take to get it started ~ along with the down turned economy right now. I offered up my design and artistic services to help create the logo, advertising materials, interior concepts, décor, artwork, etc. I wouldn't mind helping with menu ideas, too. :-) Also, I'd like to use my design skills to further educate the public about this problem along with advertising the Celiac Walk-A-Thon we just had in hopes of drawing more attention to this problem and finding a " cure. " Can anyone think of an organization that would like to have a designer create some marketing materials or logos for there research, educational, or group programs in regard to celiac disease? I may be able to orchestrate some free digital printing for some of these items as well. I'd volunteer the design services of course. ~ Also, Sappi Papers just had a contest for designers to design an image for their favorite non-profits and other charitable organizations in which I wanted to create something for Celiac Disease, but I didn't know who to ask. If they have the contest every year, and I'll check on it, they basically ask how much money the organization will need to design, print, and distribute the materials and then pay the winning designer & organization the quoted amount in order for their designs to be put into use. I thought it might be a nice way to get some " free " cash to put together some educational and promotional materials for this cause. What do you think? If not Sappi, I'm sure I can find another organization. I think this is such an important issue, and America is so far behind. We should be more concerned with what these conglomerates are putting in our " food. " Well, it's more like lab produced, pre-packaged chemicals that just happen to look like, smell like, and at times, taste like food. Ha, ha. Well, I guess it really isn't that funny. One of my relitives with Celiac was thinking of starting one in Spokane, but he was too busy with the businesses he already owned. I told him that it would go right along with music stores. Celiac is genetic so I am having my kids tested for it too. 2 of my 3 children have some symptoms that may indicate Celiac. Guest guest Posted May 9, 2003 Report Share Posted May 9, 2003 Hello, I live in Boulder Creek, Santa Cruz County. I struggled with all sorts of food intolerances after my initial CD diagnosis (dx). This, I truly believe, is due to the damage that existed within my intestines and other systemic damage to my immune, nervous, hormonal systems. Now, I am 1 yr 3 mos GF and can tolerate most other foods except cow dairy to which I react almost as violently and totally as gluten. I think that you need to approach your diet as extremely limited, for now. I existed upon salmon, eggs, GF/DF toast, Trader Joes Dynomite juice (hi in viatmins), apricot nectar (TJs), rice, baked potatoe, olive oil in moderation, no butter, no cheese no yoghurt. No hi fiber, no raw fruits or veggies. Used a lot of almond butter for fat intake. Then, slowly as the gut and immune system healed, I was able to re-introduce a more normal regime. Also, had to revisit lifestyle and stress. Did not force exercise, or any activity upon myself. You see, I was so il I was in Stanford for malnutrition and the MDS were concerned about malignancies so I was MRI'd and had other asty testing done. Long story short, I went from 88 lbs at my sickest (Feb. 2002) to 118 now. (Am 5'2 " ). Thus far, my kids are ok. We routinely test them (blood panels) every 6mos to a yr. This way, we are tracking levels if they begin to rise. Prior to the tests, I load them up on glutonous foods for about 3 weeks. Hiope this helps. I've read that the processing involved in instant coffee and tea sometimes causes allergenic problems (not gluten-related) for some people with celiac disease. I'd be very surprised if coffee grinders were contaminated. When buying a coffee mill, try to get a burr grinder as opposed to a blade system; they work better and last longer. My cousin loves it and had me try it several times but I guess it is just not to my liking. My grandfather used to drink Soya milk and I hated the smell of it then and it brings back memories just thinking about it. As far as the water like quality of rice drink, I like it. Coffee, could it be that they grinders that are used for grinding coffee are contaminated? I grind my own coffee beans. I have found a commercial supplier for beans and I get them there, at Smart and Final. The bean grinders are not hard to get. Some food processors have a bean grinder accessory to them or you can get one of the small ones like from Mr. Coffee or such to grind one pot's worth at a time. I have noticed too that sometimes an item will have large letters " Wheat Free " and then I get home and the ingredients will list barley in it. I got fig bars that said that. My husband has no problems with gluten and they did say fat free so he enjoyed them. He is on a low collesteral diet. My younger son is an artist who has only sold a bit of his art. I will tell him about the contest and see what he comes up with. He's good at that sort of thing. He works nights as a security guard so have to catch him on his days off.
