I miss ice cream...

Ever since my surgery (2/01) I've been lactose intolerant. I can eat

cheese (thank goodness!), but just about every thing else makes me

nauseous... even yogurt! I can deal with not having a glass of milk,

but I crave ice cream once in a while. Can anyone recommend a good

non-dairy one? Also, any advise on other high calcium foods would be

welcomed.

Please email to the group and not me directly. My work went thru that

awful virus a month or so ago and I don't want to infect the company.

I've had Tofutti Cuties... they are tofu ice cream sandwiches. I've

had the same problem with the lactose. They are awfully sweet

though, if you dump from sugar I would avoid. I bought myself a sno-

cone machine and some sugar-free syrups from Vitalady. It really does

the trick for me. Actually, it's usually better than the ice cream

because I don't feel sick after.

Atkins is making a new product called Endulge - it is very good and is made from

Heavy Cream so it doesn't have the milk sugar that real ice cream has and no

sugar.

Tofutti make a good product called tofutti cuties and they make a no sugar added

version. I have had the sandwiches, the fudge bars and the coffee flavored bars

- all were very good.

I don't know about ice cream substitutes. I am thinking that broccolli

is high in calcium as are some of the other dark green veggies. It's

either calcium or magnesium. Might be worth an internet search.

Or just make your own.

1/2 cup to a cup of heavy cream,

1/2 to one cup of half and half

about a cup or so of Splenda

about a 1/2 tablespoon of vanilla

pour into ice cream maker and make. I'm sure you could just freeze this if

you don't have an ice cream maker.

I take that recipe and add about a half to 3/4 cup of Jiff Extra chunky PB

and about 6 tablespoons of sugar free red raspberry smuckers jelly, toward

the end of making I add about an entire pack of Murray's SF peanut butter

cookies.... Dang this is great.

My ice cream cravings finally passed after a few years, but I

tried " tofutti " and liked it. They make little sandwiches called

Tofutti cuties and they were totally like ice cream sandwiches.

Go to a health food store and try this or another tofu-based ice

cream.

I have found Blue Bunny makes some good frozen treats. You

can find them in the WalMart Supper Stores. You might give

them a try or a read of their boxes.

Have you tried Le Carb ice cream?

It is made with Splenda. I don't know if it is made with milk or

cream but it doesn't bother me and I NEVER drink milk.
