The idea is that sugars in wine making are fermented, but the sweeter wines may have sugar added. You want the least amount of sugar regardless. DON'T buy "cooking wine" (and certainly not "cooking sherry"), as it has additives and tastes like cr**p, in any case. Beyond considering the SCD, the axiom is: never use a wine in cooking that you wouldn't drink, i.e., don't buy cheap, rot-gut wines to cook when you don't consider them good enough to drink.n -- Now available.
