I think dry red wine is ok. I hope so because I use it. The idea is that sugars

in wine making are fermented, but the sweeter wines may have sugar added. You

want the least amount of sugar regardless.

I cook with red wine all the time. DON'T buy "cooking wine" (and certainly not "cooking sherry"), as it has additives and tastes like cr**p, in any case. Beyond considering the SCD, the axiom is: never use a wine in cooking that you wouldn't drink, i.e., don't buy cheap, rot-gut wines to cook when you don't consider them good enough to drink.n -- Now available.
