I forgot that I used to make this and realized it's SCD friendly!

1 1/2 cups packed fresh basil leaves

1 1/2 T grated parmesan

1 1/2 T olive oil

1 clove garlic, minced

3 T yogurt

4 english muffins (SUBSTITUTE http://nomorecrohns.com/Documents/SandwichBread.pdf)

1 large ripe tomato, thinly sliced.

1. Blend basil, cheese, oil, garlic in food processor. Add yogurt and continue processing until smooth. Season w/Salt and Pepper.

2. Place bread on baking sheet and broil 1-2 min. until slightly toasted. Spread each half with basil mix and top w/tomatos. Broil 1-2 min. or until heated.
