We make this often and my kids' non SCD friends love it too. I don't think you can sub coconut flour for almond flour though, it is very absorbent. About a half cup of coconut flour will get you an entire batch of muffins! My daughter can't tolerate coconut flour yet and she is allergic to nuts, so we can't use nut flour. I use the same amount of shredded coconut as what is called for in the recipe for the nut flour. They come out pretty well!We were in Colorado last week and the muffins came out a lot better. I'm not sure if it's because I used a blender instead of a food processor, or because I used larger eggs than usual, or if it had something to do with the altitude, but they were the best muffins we have had so far.
