coconut muffins?

I'm not doing too much baking yet and I have trouble right now with

coconut anything, but my understanding is that a lot of the recipes

calling for almond flour work perfectly well with coconut flour instead.

When I did do some coconut flour baking it worked fine even when I was

totally ad-libbing. You might need to adjust the flour/liquid ratio

a bit but just use common sense here.

Does anyone have a recipe for coconut flour?

I don't think using coconut flour in place of almond flour would work. The two

react very differently and you need *significantly* less coconut flour than you

do almond flour. You also tend to need a lot more eggs (or at least liquid) for

the coconut flour because it absorbs it like crazy.
