Is provolone permitted?

I didn't see it listed in the Cheese Appendix of BTVC, but I saw it listed as an

ingredient in Stuffed Peppers on an SCD blog.

Can someone clear this up for me? I don't have a lot of experience eating cheese

so I want to make sure I am using the right stuff.

I was planning on trying my hand at some souffle bread today, and if it was a

success...I wanted to top a toasted slice of it with some chicken and bacon,

then put a slice of cheese over it and broil it to melt the cheese.

Just remember, when you read recipes, that just because someone says the

recipe is SCD-legal, doesn't necessarily mean it is. You still need

to check all ingredients against the list, just as you are doing here

with the provolone.
