Your zucchini may have been too wet. You could try squeezing your shredded zucchini in paper towels to get some of the moisture out before baking.

Hello gang, I just tried making the zucchini muffin recipe from the book today & they came out super soggy. I put em back in the oven for another 5 min but it didn't seem to help. Anyone else have this problem or have any advice?Thanks,

I

make zucchini muffins often. I learned early on that it helps to put the

shredded zucchini on paper towels for 10 to 15 minutes before adding to the

batter, spreading the zucchini out as thinly as possible. I also pat or

blot at the zucchini with more paper towels until it is fairly dry. If

you don’t have paper towels, or don’t like to use them, a clean

cloth or two (100% cotton absorbs better) will also work

I

also check the texture of the muffin batter after I add the zucchini. If

the batter looks too wet, I’ll add more nut flour until the batter is

firmer but not too stiff and dry.

I like to put my shredded zucchini in a clean cotton cloth and wring the water

out of it. You can get it pretty dry that way.

Zucchini has an amazing amount of water in it. In fact, if you shred it and put it into a colander it'll drain for a long time. That should help a lot, especially if you add a touch of salt (then cut down on the salt in the muffin batter. The salt helps extract the water.   n-- Now available.
