This sounds great.

I just made a pea-zuke soup again.I forgot to do sauteed onions, and

it was fine.

Creamed Pea and Zuke Soup [non-dairy]

1.5 lb frozen sweet peas

2 large or 3 small zucchini'

2 quart chicken broth

fresh dill

S + P to taste

Heat about 2 cups of your chicken broth.

Slice zucchini in chunks. Add to the broth, adding more broth only if

needed.

When zucchini is mostly cooked, add the sweet peas, and cook them thru.

It is best to allow this to begin to cool down.

Puree the zuke- peas with and blender. I have been doing this, then

finishing in regular blender. Sometimes non-vita-mix blender does

chunks more smoothly this way, and the hand blender takes just a

moment to clean up.

When pureed, return to pot, mix with remaining broth.

Can eat warm or chilled.

Very refreshing chilled.

This soup takes very little time to whip together-- if you have broth

at the read.

A zucchini soup of a different color (yellow to be exact)

adapted from Molly O'Neill A Well-Seasoned Appetite

Indian-Spiced Zucchini Coconut Soup

1 tsp. olive oil

1 med. onion, chopped

2 garlic cloves, chopped

4 med. zucchini, diced

1 tsp. cumin

1/2 tsp turmeric

pinch cayenne

1 1/2 tsp salt

pepper

1 1/2 c. chicken broth

1/2 c. unsweetened coconut milk

Garnish:

2 tsp. fresh cilantro, chopped

2 tsb. fresh mint, chopped

1/2 tsp. grated orange zest

1 tsp grated unsweetened coconut

Heat oil in a large pot. Saute onion and garlic for 5 min. Add squash

and cook for 5 min. more. Add spices, seasoning and broth and coconut

milk. Cook

until squash is soft, about 25 min. Puree in food processor. Reheat

and serve with garnish of chopped herbs, orange and grated coconut.
