What I Ate Today!!

I figured I'd start this up again, in case anyone's interested. It's

always helpful for me to see what others find to eat!

Breakfast: smoothie with one banana, some frozen strawberries, a

splash of Knudsen Just Blueberry juice, a raw egg, some yogurt, and a

few handfuls of baby spinach

Breakfast #2: two poached eggs with raw cheddar cheese and sauteed

onion and red pepper (first time I've had a nightshade in months!!)

Lunch: baked chicken breast smothered in VCO and butter, half a

steamed zucchini

Snack: almond crackers (Elana's recipe that Mara posted; YUM!!) dipped

in yogurt dip (Marilyn's ranch recipe; also yum! And btw, my dad tried

this dip and said it was way better than anything store bought =D )

Dinner will be baked salmon and steamed broccoli (with butter, of

course)

Snack will probably be yogurt with a banana.

Usually it's so hard to balance all the food types to try to get in

enough calories, and not eat too much fruit, or nuts, or too little

fat, etc...but I'm rather proud of my menu today if I do say so myself

=) If only every day would work out as well!!
