Guest guest Posted June 16, 2010 Report Share Posted June 16, 2010 My sister is in from Utah... she's sorting a bunch of my Mom's stuff, as it's hard for Dad and me. I'm doing the cooking, for the most part. Sunday was roast turkey, butternut squash, and cranberry sauce. Monday was roast lamb, tzatsiki, and a Greek style broccoli salad with a Greek oil and vinegar dressing. Tuesday Dad wanted to eat out. Today, it with be a Caesar salad, with homemade dressing, and baked pork ribs. Parmesan is grated. Dressing is made. Ribs are baking. Tomorrow, my sister is making her Mexican mix, though I have to make tortillas out of souffle bread, and I've already made the guacamole. Friday, it will be catfish pecan and brie spinach. Saturday, which is Dad's birthday, he wants to go out for a steak. (I made the reservations. The check comes to us. ) Sunday, which is Father's Day, I am doing an oyster / seafood extravaganza, My Dad and Harry love oysters. My sister and I do not. (It's a texture thing. Ironically, Marge and I both used to like clams, but Harry and my Dad don't like THOSE.) Shrimp / Catfish / Oyster & Artichoke bisque Shrimp / Catfish / Oysters Fitzpatrick (with tomatoes, garlic, and provolone) Shrimp / Catfish / Oysters Rockefeller (spinach, parsley, and bunches of other stuff, finely ground into a sauce) Shrimp / Catfish / Oysters Bienville (a creamy shrimp & onion sauce), topped with sharp cheddar Pecan Pie All SCD-legal. A lot of work. But delicious. AND... I'll bet nobody will notice the burned spots as much you you, though. If you don't have time to make another one, maybe try not to worry too hard? (Or offer Dad a rain-check for another one?) I wonder if your oven just got a little creative about temperature. Ours does that once in awhile and it can be in either direction, so no trend to try to re-adjust anything about. I hate it when it acts up that way! Well, it's the screwiest dang thing I've ever seen! The sides of the pie crust look burnt. Harry says they taste okay. I'm wary about it -- you know how it goes: it's my Dad's BIRTHDAY, and I want everything to be perfect, especially since his birthday last year was so horrid, with my Mom getting so sick. Anyway, the sides are very dark / burnt looking. The bottom of the pie crust looks normal, the way it should. The filling tastes great.
