Lots of frustration and it has been many times I just wanted to quit because I have had so many flares.. But I have made it for 1 year now. And I’m SO much better. I’m on my way out of the last flare and not everything is ”perfect”. Bu teven then I am better then before I started. I started SCD and I said to my self that I will take it slowly. I thought that after 6 months I would have been eating several vegetables, fruit, nuts (so I can make my nut bread!). Well.. After 6 months I have had 2 bad flares, I have been back to intro several times. I was eating 6 very very soft vegetable, no fruit and no nuts. In the beginnging I always asked ”how long before I can eat xxx” ”how long do I need to boil broccoli” ”when can I try xxx”? Someone always answered me (thanks to those people). After I while I realized that SCD is personal. What works for me don’t work to the girl next door. When I asked ”how long do I need to boil broccoli” someone said they boiled it 15 minutes. I needed to boil it 45 minutes before I could digest it. Now, 1 year after I still boil it 45 minutes. I asked lots about fruit. Because I wanted to eat fruit! But after I while I accepted that my stomach don’t like fruit. After I while I realized that the stages on pecanbread is a guide. Only intro is for everyone and time based. I could eat broccoli (stage 3) 5 months before I could eat zucchini (stage 1). I can eat raw blueberries, but I can’t eat pear sauce. In the begining I wanted to reduce cooking time for my veggies. Everytime I tried to boil then shorter I got bad. So I accepted that I need to boil them so long. And then it was easier to look forword.. I did take it very slow in the beginning. Maybe to slow? I don’t know.. But I think it was the right for me. After 10 months I was eating 8 vegetables, meat, some fish and egg. E wrote to me ”you are amazing”. I printed that out on a large paper and put it over my macbook. Everytime I was angry at the diet I looked up and read it. Over and over again. It helped me I felt like I made food all day. The last 2 months I have only made boiled food 1 times a day. I make one large batch of vegetable to every dinner and the veggies I don’t eat for dinner I put in the frigde and eat to breakfast and lunch. The same with meat. I always make extra meat and put in the freezer. Then I taw it before I eat it. When I do it this way I can eat several types of meat every day and I don’t need to use so long time at the kitchen! For everyone who have just started: Its a hard journey. Sometimes you wish you didn’t start. But after a while, when thing has setteled down and you see results you will love it!
