die-off effects?

When I first started SCD with the intro diet (on 6/18/10), aside from feeling hungry a lot I felt GREAT--tons of energy, even if my kids didn't sleep so well. But after about 5 days of feeling great my energy has gotten lower and lower, and now some days I just feel foggy and fatigued all the time, and super cranky. I can't tell whether this is a die-off effect or if I'm missing some kind of crucial nutrient because my diet is so limited. I'm now at stage one, having just introduced cooked spinach a couple days ago. (I mentioned in a different post that I had to start over because when I first moved to stage 1 I introduced too many foods too fast; my second start with intro was on 6/28.) I'm still having issues with constipation (minor reprieve yesterday, but it wasn't a great BM--not diarrhea, but very small and sticky, so not what I'd consider good; I was having really good BMs when I first started intro, for about 5 consecutive days).

My current diet consists of: SCD yogurt, farmers cheese, eggs, ground beef, broiled fish, chicken soup or roast chicken, cooked pureed carrots and cooked pureed spinach. And gelatin made with Welch's grape juice. And I drink a lot of water (nursing).

Last night I made roast chicken for dinner and did feel really good after that--very clear-headed and my energy went up, but today it's back to fogginess and fatigue. (I also didn't sleep much last night because of the kids--2 1/2-year-old is refusing to sleep in her bed, and 3-mo-old just kept waking up.) I miss coffee...

Also, I just wanted to express my gratitude for this listserve and all the encouragement you all give! Not just to my posts, but for everyone's, it is really great. I don't think I could do this without all your support, so thank you!
