Ball Freezer Jars and Crystallized Ice Cream

It happened, my coconut ice cream is turning into ice crystals in the freezer.I read in the Mark's Apple forum that Ball Freezer Jars are the cure for this.  Some people even put the freezer jar in a Ziploc bag. 

I'm going to give these a try. Has anyone tried freezing glass jars this way and having luck with it?BTW, I'm not totally happy with 1 Tbsp of finely ground coffee in the ice cream, so I might tray boiling down some dripped coffee and trying that.  Is instant coffee illegal because of the probable chemicals added to the coffee to make it? It looks like a pretty lengthy process.
