I haven't made that many, so my experience isn't worth all that much :) My favorite cookies are Marla's Magical Nut Butter Cookies. She wrote this a while back:

'I've been playing around w/this cookie recipe because I LOVE to make icecream sandwiches w/these using frozen banana and yogurt as the icecream.  Recently I made mine and they were so flat..and the recipe says to roll into a ball.  Mine basically pour out of the bowl!  So I did a few things (I'm usually not one to tinker w/recipes!)

 

Modified version of Magical Nut Butter Cookies:

1 c nut butter

1/2 c honey

2 eggs

1 tsp legal vanilla

small pinch baking soda

can add cinnamon

 

Mix all together with mixer and refrigerate batter.  It will thicken back up this way.  Spoon batter onto parchment paper lined cookie sheet (they seem to spread a lot) and Bake aat 350 deg for about 14 min.  Cool slightly before removing from pan.

i cannot find one i love and need suggestions. my favorite ready baked cookies are the JJ Butter Cookies from digestive wellness, they remind me of oatmeal rasin cookies without the raisins and have a great chewiness/mouth feel. most cookies i bake are bland, crumbly, and just taste like plain baked almond flour

I love these! (It's a chocolate chip cookie WITHOUT the chips :). They get a

little crispy on the edges and stay chewy in the middle. I keep them in freezer

since I can't have that many at once.

That sounds so good! Someday when I'm symptom free, I'm going to remain SCD with

the exception of using chocolate. I miss chocolate chip cookies!
