Coconut flour vs. shredded coconut and nut-free birthday cake suggestions

My five year old daughter and I are on week five of the diet. Since my daughter

has peanut and tree nut allergies, I have been substituting shredded coconut

whenever nut flour is in the recipe. I put the shredded coconut in my food

processor until it is closer to flour consistency.

I decided to get coconut flour to use in a modified banana & coconut bread

recipe that I found. My daughter has ulcerative colitis and since week two on

the diet, her diarrhea has been almost non-existent. She had a very small

amount of D on Wednesday, but since eating the modified banana bread with

coconut flour, she's had 4-5 episodes of D and has been complaining that her

tummy hurts (first time in weeks). I have been keeping a food journal and

coconut flour is the only thing that is new in about five days so I told her

we're not going to eat any more of the bread.

My question is... if she does okay eating shredded coconut and coconut oil,

could she still have issues with coconut flour? If so, is that because there is

a larger concentration of it in the food?

On a separate note.... my daughter turns six at the end of July. I have always

made her a special cake that is different from the one her party guests have

because of her nut allergy, but now on the SC Diet, we're more limited. I saw

the Autumn Cake recipe on Pecanbread.com that doesn't require nuts and plan to

try it. Are there any others you recommend? Has anyone tried to make the

muffin recipe as a cake?
