We are almost one month into the diet and had to travel this weekend for a juvenile arthritis conference/camp. Fortunately it was just four hours away, so we could pack everything in the car, but I ended up staying up all night the night before we left preparing all the food for the weekend. I am doing the diet with my five year old daughter who has ulcerative colitis. I was nervous about whether I could make it work, but everything went very well! I had just enough of some things and a little extra of other things, but didn't run out of anything. I took a pan, Bella blender (like the Magic Bullet) and some Easy Lunchboxes (to transport the food once I had cooked it). During the conference/camp, I had the opportunity to speak with a couple of families about the diet and hope they will try it with their kids too. My daughter seems to be doing really well on the diet since the end of week one. I've been very encouraged. I think the best part of it all was two weeks into the diet when we were playing " True or False " during a long car ride and I asked her " True or False - you want to continue on the Specific Carbohydrate Diet " . She said " True! I want to continue because my stomach no longer hurts. " I realized when she said this that she hadn't complained of abdominal pain in more than a week! When we were at her arthritis check-up last week, the rheumatologist said in her experience if we can keep her UC quiet, her arthritis and uveitis will be quiet too. I left that appointment feeling very hopeful that this diet is the answer we've been looking for. Not only has the diet been helping my daughter, but I have seen benefits too. I have never felt better! The dark circles under my eyes are gone. My mood is elevated. I no longer have sugar cravings and have lost 10+ lbs. And best of all, an unexplained pain in my lower right abdomen is gone. My doctor couldn't figure out what was causing it. I've lived with the constant pain for 3+ years. Within two weeks of being on the diet, the pain disappeared. Amazing! Thanks again to everyone who spends countless hours responding to questions.
