Sugar Free Applesauce Cake

I just made a really DELICIOUS sugar free cake for my family tonight

from a recipe that I got off of <A

was

very moist and sweet and felt very " holiday-like " to me. I thought I would

share the recipe. Keep in mind that this is NOT a low carb treat, and it does

have natural sugars from the applesauce and molasses. It would be possible to

experiment with this cake, substituting some of the flour with whole wheat

flour, soy flour, or even protein powder that is heat stable. Keep in mind

though,

that you cannot eliminate all of the white flour, or it will not be cake-like

at all. The less white flour, the more dense it will become.

1/4 cup canola oil

3/4 cup Splenda Granular

2 Tablespoons molasses

1 large egg or 1/4 cup egg substitute

3/4 cup unsweetened applesauce

1 1/2 cups all purpose flour

1 teaspoon baking powder

3/4 teaspoon baking soda

2 teaspoons cinnamon

Mix together the oil, splenda, molasses, egg and applesauce. Sift in

the flour, baking powder, baking soda and cinnamon; stir until smooth. Spread

batter into 8 " x8 " cake pan sprayed with nonstick cooking spray. Mix in small

cup: 2 Tablespoons Splenda and 1/2 teaspoon cinnamon. Sprinkle mixture on

top of cake batter. Bake at 350 degrees for approximately 20 minutes.

Makes 9 servings, 170 calories, 3 g protein, 24 g carb, 7 g fat
