Guest guest
I made the yummiest deep fried shrimp with a breading that actually stuck and stuck really, really well--and came out like a crunchy batter. I used GFCF pancake mix (no sugar or cinnamon in the mix ingredients), potato flakes, and GFCF seasoning salt. I dipped the shrimp in beaten egg, then rolled and patted them into the breading mix, then deep fried. They were so yummy! Better than going out (which we can't do anymore anyway for seafood). I have also tried it with fish and it was just as good. Thought I would share. I have experimented with all sorts of flour ingredients and just could not make a breading that would stick until I pulled out the pancake mix. The combo of flours and baking powder in the mix gave the breading the " puff " I was looking for.
