I just got the menu for my son's Kindergarten feast and I was going to ask for a pumpkin pudding recipe! Thank you, thank you! BTW, is the pumpkin just plain old pumpkin, or is it seasoned already? Guest guest Posted November 17, 2001 Report Share Posted November 17, 2001 I used plain pumpkin--Libby's--in the can (takes about not quite one 15 oz. can). This was very easy to make. It does form a hard " skin, " though. I don't know if it would help to cover it to prevent this or not. This is my own recipe; I was experimenting. My son loved it (and so did I)! You could use GFCF pumpkin pie spice, too, if you can find it, in place of the cinnamon. I didn't have any that I was sure was okay, so I just used Tone's cinnamon.
