Make sure it is very hot, I usually let it preheat for at least 7-10 minutes and then I sprinkle a bit of water to make sure it is sizzling. Don't cut the potatoes to fat either cuz that can make the insides hard when you think they are done. You can also make them in the oven too. Cut your potatoes and mix them in a bowl with some oil and then put on a baking sheet. I think it usually takes about 30-40 minutes at about 400 degrees. If you sprinkle a little pure garlic powder onto fried potatoes, then finish toasting them, they will look golden without having been fried to death in too-hot oil. Golden Fried Potatoes Peel and cube some potatoes. Place the cubed potatoes in a non-aluminum pan, cover with an inch of water, bring to a boil and then turn off the burner and let sit for 5 to 10 minutes, until they are nearly cooked through. Drain and cool (otherwise they will crumble during the next step). Place potato cubes in a frying pan with a little olive oil (or oil of choice) and fry on low heat until crispy. Since they are already cooked, this step shouldn't take more than 5-10 minutes. Sprinkle some garlic powder onto the cubes and continue lightly frying them until they are golden brown.
