an oops that turned out yummy

ok everyone i was in a hurry and accidentally added the wrong

ingredient to some muffins that i was making this morning before

school for the boys. i intended in making gfrice free muffins on page

126 of special diets for special kids with my own substitutions

ofcourse... here goes...

These are TASTEY i am eating one right now!! yum yum

oppsy muffins!!!

3 eggs (i use egg replacer or egg whites..dehyd)increased because of

oops

1 mashed banana

1/4 c oil

1 to 1 1/2 cups of water(possibly a little less or more i panicked

when i screwed up the orig recipe and just added liquid!!)

1/3 c bean flour(the recipe called for quinoa, we hate it so we use

chickpea besides=protien)

1/2 c tapioca starch

1/2 c potatoe starch

1 3/4 c rice flour=the oops

1 tsp xanthum gum

2/3 c sugar (i increased because of the oops)

3 tsp baking powder(also increased because of oops)

1/2 tsp cinnamon

1/4 c flax seed (i add flax seed to most sweet baking as i also stir

in bean flour to most things i bake.)

combine dry ingredients and set asside

beat all liquid ingredients and add to dry ingredients.

(changed this part too)

bake at 375 degrees for 20-30 minutes (check closely because this is

where i panicked at this point too,, ha ha i'm not the most

experienced cook) check with a clean knife or tooth pick
