Guest guest Posted September 20, 2001 Report Share Posted September 20, 2001 I was told by our local hfs owner that he receives the bread frozen and it should remain frozen until the week you want to use it. He also said that it's best not to refreeze it if you buy it at a store that lets it defrost and just refrigerates it. (Stores who deal in large volume can do this) He said that because there is no gluten refreezing it and then defrosting it make it even more crumbly and almost impossible to keep it in one piece.
