Holy Bread (or is it holey?)

You know, bread that looks like swiss cheese? That's what I made

last night. My first attempt at GFCF yeast free bread and it didn't

look like bread. My son loved it though. He ate 3 slices with

nothing on it. The closest thing to bread since he went GFCF. I

made the Yeast Free Bread recipe in ' cookbook. What did I

do wrong? I don't have a bread maker, Kitchen Aid or electric mixer

so I used my Cuisinart with the dough blade. At first it was a very

sticky ball. I attempted to put it in the bread pan then looked over

and noticed some of the water I measured was not put in it. I put it

back in the cuisinart, added the rest of the water then mixed it.

When it was in the oven it raised so much it touched the top of the

oven. It fell while cooling. It was doughy in the middle with big

holes. Was it that way because I had to take it back out to add the

rest of the water, because I should have pressed it down more into

the bread pan, because I used the Cuisinart to mix or is it just that

way because it is yeast free. Is there maybe another recipe that

works better? My son is allergic to soy, corn & yeast in addition to

GFCF. I want to try it again but I would like some advise so I don't

keep making mistakes. I was hoping I could get by without buying

another kitchen appliance but if that is what's necessary, I will. I

never realized how much my son missed bread until he saw I was

actually going to give him some.
