Homemade French Fries

I'm been making homemade french fries for my son for the last couple

of weeks and he absolutely loves them. The problem is they are

awful! They are oily, heavy, and limp. I bought of deep fryer so I

just plug it in (can't control the temperature). I cut up a potato

into french fries and I fry them for a few minutes until they look

done. What am I doing wrong?
