We have done the diet for 7 years.. here are some of my tricks for Thanksgiving: I have two stuffing recipes that I like, my Chinese Sticky rice stuffing my family's favorite. Soak 3 (I make this and cook steam it separately so I can do both stuff if I want and have an extra dish) cups of Sweet Rice 3 to 4 hours. They recommend this but even in a hurry, I just cook it. I cook it however in an electric rice cooker. I am Asian so it is what we like to use. Sauté onions, (one chopped), 2-3 minced garlic's, until lightly brown. I add our favorite gf/df sausage, add thinly sliced leeks (2to3) until nicely limp and you can simply add a bit of water to keep things moist. I usually sauté in a bit of olive oil. Add cooked rice and then simply toss with a bit of salt and Gf/df soy sauce. You can add other things if you desire. I take enough to stuff the bird, and with the rest of the rice: for other family members in a seperate container Oyster beef sauce, Shitake mushrooms thinly sliced, a bit of shrimp, and place in a clay pot and then slow cook in my oven for about 2 hours at a very low temp.. 250. ( I have double ovens for me this is easy, but you can make it ahead and cook it before the turkey or the night before. Noodle dressing: I use the cooked rice noodles.. and again, I prefer a homemade rice noodle, but these can be purchased in your Chinese section, however read carefully since some contain corn and wheat. I live in Seattle, and buy only rice, water, and nothing else. You can then do the above recipe with noodles if you prefer. My other noodle dressing: Sauté an onion, use gf/df sausage or bacon, add garlic, use the rice noodle (western style... I believe we have Deboles) then add cooked noodle, flavor with sea salt, and yes... regular turkey poultry seasoning, to taste. As far as desert goes I simply bake a pumpkin soufflé and do vanilla soy ice cream. Also when meals or feasts are done in schools, I volunteer, and make sure, EVERYTHING is gf/df, and I watch over and stand guard... it works... my son still looks at all foods.. but knows he will feel bad.. however it can be very tempting.
