Guest guest Posted October 11, 2001 Report Share Posted October 11, 2001 I have found a recipe that works in making a replacement for Nilla Wafers (or do IMO!). It's so easy! I used a modified version of the recipe for White Cake from the GFCFRecipes Yahoogroup Files: 2 cups GF flour 2 teaspoons xanthan gum 1 1/2 cups sugar 1 teaspoon salt 1/2 cup shortening 1 cup GFCF milk 1 teaspoon GFCF vanilla 3 eggs ***(the original had 3 1/2 tsp baking powder) Mix all that in a mixer and then spoon it into a pastry bag.. Pipe silver dollar sized circles of batter onto wax paper and bake in the oven at 350 for 20 mins or until light brown. Presto! Hope this helps someone!
