Noah's Bread 1/2 cup white rice flour 2/3 cup tapioca flour 1/3 cup potato or corn starch 1/2 tsp salt 2 tsp baking powder 2 tsp guar or xanthan gum 1 egg 1/3 cup oil (I've used olive, canola, safflower, and vegetable) 1/2 cup cf milk (I use almond, rice or dari-free mix) 1/3 cup sparkling water (I've used perrier, club soda, various sparkling waters) Combine all dry ingredients, mix together. I combine beaten egg, oil and milk. Add slowly to dry mix. Beat well. Add sparkling water very gradually. Beat well. Drop from tsp. into hot oil or form into donuts. If you're making hamburger buns or rolls, put batter into a plastic bag, cut small hole in corner, and " pipe " onto cookie sheet or hamburger bun pan. I've used Noah's bread to make great pizza crust, bagels, big soft pretzels, cinnamon rolls and more. I find it to be a very versatile recipe and my son loves it. Unless I'm only making donuts, I almost always double or triple this recipe. I get 12 hamburger buns out of a double batch....
