It is GFCF, comes in several colors, and has a shelf life of one year after opening. It is easy to use. I wouldn't freeze them frosted; frosting tends to gather condensation when frozen. You can frost it in seconds with this. It tastes really good too--like cookie icing. Food colorings are not well tolerated by my son and I avoid all artificial ingredients. I would suspect that there are many other children who have food intolerances besides the gluten and casein.
