I gave them the web addy for gfcfdiet.com and told them I would share this with an e-list of about 2000 families on this diet: : Thank you for your question. Attached is a document providing the requested dietary (gluten) information. In reviewing the list on the website you provided (thank you by the way), the items on the attached gluten document also are acceptable for a casein free diet it appears. Please review to double check. The items on this list are all prepared in our restaurant. These ingredients come from a variety of different sources and suppliers from all over the world. Our suppliers prepare the ingredients in a number of different ways. In addition these ingredients are used in a number of different ways in our restaurants to prepare meals for our guests. With the variety of ingredient items that we use, and the number of ways we use each item, it is important that we address dietary restrictions carefully when providing information to our guests. The health and safety of our guest is, of course, paramount. In light of this, with regard to gluten-free products that we can provide to our guests we can only recommend items that: 1) Do not contain wheat, barley, oats or rye. 2) We have prepared from simple whole ingredients (i.e. fresh lettuce, fresh raw chicken, etc.). 3) We have not added ingredients that suppliers have processed to any degree because of the minimal possibility that there may be carryover of gluten in the suppliers' processes, which we will be unaware of and cannot control.
