Whipped topping recipe

I did a little experimenting with the whipped topping recipes posted on this

board. One of the recipes has been posted a couple of times - and it didn't

work for me, using Darifree. The unsuccessful recipe, just for your notes,

has the following ingredients:

1 tsp unflavored gelatin

2 tsp cold water

3 TBSP boiling water

1/2 cup ice water

1/2 cup dry milk powder

3 TBSP sugar

3 TBSP oil

Directions say to " Place the ice water and milk powder in the chilled bowl.

Beat at high speed until it forms peaks. " Just a hint, water mixed with dry

Darifree will not whip (at least not after 15 minutes of standing there with

a KitchenAide classic on high speed. I figure most of us can't stand there

for that long very often). It won't thicken until gelatin is added. Even

after I added the remaining ingredients and followed the rest of the recipe,

after it cooled, the gelatin settled to the bottom, it was yucky.

Ah, but SUCCESS finally!

Whipped topping

3/4 cup very cold rice, soy almond or Darifree

1/2 cup granulated sugar

1 tsp unflavored gelatin

2 TBSP water

Place medium sized stainless mixer bown & electric beaters in freezer for at

least 1 hour. Combine gelatin with water and microwave for 20 seconds.

Remove softened gelatin and allow to cool to room temp. Combine cold milk

and sugar in mixing bowl, and slowly add gelatin. Beat on high speed until

forms stiff peaks. Yields approx. 2 cups. Use immediately.

My notes: I used Darifree. After 10 minutes of mixing, I had soft peaks (got

tired of standing there), and then put it in the freezer for 24 hours,

(well, even Cool Whip is frozen). The consistency wasn't quite as creamy as

cool whip, but it was still good. Even hubby liked it, but he prefers the

creaminess of the cool whip. It was more like a merange. Next time(s) I

might try a little less sugar (it was pretty sweet), corn syrup, oil,

Crisco, or a little xanthan gum.
