Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 Okay, I finally did it! I recreated everything for my son's thanksgiving feast to send in to kdg. with him. Below is an easy pumpkin pudding recipe I concocted. It is GFCF, soy, egg, corn, rice, and virtually fat free. Enjoy! Pumpkin Pudding 6 T. tapioca starch 3/4 c. sugar 1 1/2 t. cinnamon 1 1/2 c. pumpkin 1 can (14 oz.) pure coconut milk (I used Thai Kitchen) 1 1/2 t. vanilla (mine was glycerin based) Mix everything together, except vanilla. Microwave until thick as pudding should look. Whisk every minute to avoid lumps, and also because it suddenly starts to thicken really fast. Cool and eat. Yummy!
