My name is Kathy and my 6 yr old daughter has Autism. We went to the Pfieffer Treatment Center in Naperville, IL (I live in Elmwood Park, IL) and they want us to start the GFCF diet. She is pretty much CF and we are still working on the gluten part. I am finding some substitutions every week and by reading all of your posts. I do have a question. Has anyone said that you have to restrict all chocolate, cocoa, and carob? The Pfieffer Institute is restricting this on because of the copper. If any one of you have ever encountered this is there any substitutions I can make for this? I think it is crazy. We are still waiting for our results, however and maybe there is some logic or good reason to it. I look forward in being a part of this team and offer and receive insights and advice from you.
