Does this mean that > they are dairy free, soy free, gluten free? Kosher for Passover means that certain foods are forbidden: these include foods made from risen flour, spelt, barley, oats, and rye. Most observant Jews in the U.S. would also omit corn, legumes, millet, or rice. Dairy is *not* prohibited during Passover. OTOH, b/c of the proscription on risen flour, there are a lot of products made from potato flour and other exotica during the holiday, and you can find things then that you can't find the rest of the year.
