New here and need some advice

I've been reading Karyn Seroussi's book (and it's a God-send), and am

implementing the gfcf diet. My son has been off casein for a while, just not

gluten, so the gluten is the next to go. My son is 30 months old, was diagnosed

PDD 23 months old, and was diagnosed with milk, soy and wheat allergy at 24

months old. So the milk, soy and wheat were gone, but I'm sure that gluten is

in much more than wheat. Any how, my question is that my son has sensory

issues, and is currently in OT and special ed, but is still very reluctant to

try new foods (especially with texture). However he could eat spaghetti (made

with rice noodles and homemade sauce with hamburger) 24 hrs a day. I'm

wondering if he isn't craving the tomatoes? Karyn mentioned the phenolytic

thing, and I'm going to attempt to take tomato out of his diet, but I'm stumped

at how to do it. He literally will not eat anything but spaghetti and

applesauce. He can also eat ketchup with a spoon. YIKES, the more I type the

more I see how much phenols he actually eats a day. Does anyone else have any

experience ideas on how to phase out these foods? Thanks so much!
