Guest guest Posted October 23, 2001 Report Share Posted October 23, 2001 Cupcakes and frosting are VERY easy. For cupcakes, Miss Robens Chocolate Cake Mix. I keep two packages in the cupboard at all times. For frosting, someone posted this recepie a few months ago, I think it works perfect, and it's very easy: 1/4 cup GFCF margarine, softened 1/3 cup cocoa powder 1 teaspoon GFCF vanilla 2 cups GFCF confectioners sugar 4 tablesppookns water With electric mixer on high, beat margarine until fluffy. Beat in cocoa powder and vanilla on low. Gradually beat in confectioners sugar, alternating with water, until desired thickness is achieved. If a thinner frosting is desired, increase water. If a thicker one is desired, decrease water. For vanilla frosting, omit cocoa powder, and increase sugar to 2 1/2 cups. I recently made these cupcakes for a Halloween party with colored GFCF sprinkles. Everyone remarked at how great they tasted. My husband thinks they are as good as regular ones. I also have a number of them stored in the freezer at my son's day care. When the last minute birthday cakes are brought out, he has a stash of GFCF cupcakes for himself. According to the cook, they defrost really well, just take them out a couple hours before. I personally really like this frosting recepie because it is so easy.
