vanilla extract

I know there is this ongoing debate about GF vanilla, so I just got

vanilla flavor. Ingredients are glycerin, certified organic vanilla

bean extractives, water. That sounds okay doesn't it? Does anyone

know if there is that much of a difference? It smells good.

Make sure it doesn't have any illegals in it like corn syrup. The alcohol is

fine, but those sweeteners aren't.

Sorry, I've searched the lists and sites and can't find an answer.

Is " pure vanilla extract " legal? (Yes, I know flavor extracts have alcohol

in them but nonetheless the label on the product is " pure " )

Pure vanilla extract is legal providing it is really pure and doesn't

have sugar in it. Check the lable, just because it says extract

doesn't mean it isn't laced with sugar. Also, about the alcohol,

COOKS ILLUSTRATED says that 90% of the alcohol will evaporate if you

leave the bottle open for 24 hours. I leave mine open the first day

I get it and then put it in the refrigerator. The rest is lost

through cooking, especially when baking. : D
