I tried it and it was pretty good-would be better except I hate my bread machine.F requested, posted below is the machine bread recipe, that Jack calls 'Cake Bread'. I wish I could take credit for devising the recipe, but I can't. The recipe originates from a lovely lady called Barbara , known affectionately in the UK as Barbara 'the Bread' of Barbara's Kitchen. I have checked with her that it is ok to print her recipe. If you want to know what her bread looks like - have a look at her website www.barbaraskitchen.co.uk scan down and there is a loaf sliced. The xanthan gum she supplies is also corn free & she does supply to the states Sorry Sharon they do contain eggs, but Barbara does have a wonderful recipe for hand made bread rolls that are gluten, dairy, egg and yeast free. They are like English muffins & were the first thing I ever baked for my son & they tasted so good, it gave me heart that I could produce something edible. She also has a recipe for gluten & dairy free bread by hand - but I've never tried this - far too lazy!!! If you mail Barbara at enquiries@... I'm sure she will share her recipes with you. This recipe makes 1 1/2 lb loaf (she has others that go up to 3lb) 1 1/2 LB WHITE LOAF FOR BREAD MACHINES © COPYRIGHT BARBARA'S KITCHEN 2001. Dry Ingredients 2 1/2 cups white rice flour 1/2 cup tapioca starch flour (cassava) 1/2 cup potato starch flour 1 tbsp xanthan gum 1 tsp salt (or dried herbs) - I never bother with either 2 tbsp sugar 1 sachet (2 1/4 tsp) dried yeast Wet Ingredients 3 large eggs (room temperature) 1/4 cup oil 1 tsp cider vinegar - I never bother 1/2 cup milk alternative 3/4 cup water - hand hot (I have successfully reduced recipe to 2 eggs & added another 1/4 cup of oil) Method Mix together all the dry ingredients (Except the yeast) in a separate bowl mix together all the wet ingredients Place the wet ingredients at the base of the bread pan. gently spoon the dry ingredients on top of the liquid. Sprinkle the yeast on top Set the machine on a normal bake setting Depending upon your machine you may need to give the mixture a hand to mix - use a wet plastic spatula to turn over the ingredients a few times - I just rough mix all the ingredients together in a bowl before placing in the bread pan. It does freeze well To make a mock brown loaf add a tbsp of molasses or black treacle to the wet ingredients.
