Biscuits (I topped them w/ sausage gravy for

breakfast):

1/3 c. shortening

1/2 c. potato starch

3/4 c. cornstarch

1 3/4 tsp. xanthan gum

1 TBL. baking powder

1/4 tsp. baking soda

1 TBL. sugar

1/2 tsp. salt

3/4 c. soy milk

Preheat oven to 375. Blend all ingrediants. Pat out

dough on a " cornstarched " surface. Dough should be

1/2 " thick. cut out biscuits with and inverted glass.

Place biscuits on a lightly greased baking sheet.

Bake 12-15min. until lt. brown.

I got this recipie from one of my gluten free

cookbooks and just substituted soy milk for regular

milk. It was a definate hit at my house. Much better

than the pillsbury biscuits we used pre diet.
